Zucchini Fritters

2 zucchinis (diced or grated)

2 eggs

2 cups Bisquick

½ cup Parmesan Cheese

1 onion finely chopped

Italian Seasoning

Dash of salt

Water

Oil

Sauté zucchini and onion, add salt and seasoning to taste.  Cover and simmer until onions are translucent (this will make its own juice).

Mix together the eggs, Bisquick and Parmesan Cheese in a large bowl.  Add the zucchini mixture to make a thick pancake like batter.  Add additional water if needed.

Drop by spoon into a griddle with heated oil.  Cook and turn until brown on both sides.  Keep in warmed oven until all are fried.

These freeze well.
