Lemon Bread

1/3 cup shortening

1 1/3 cups sugar

1 egg

1 ½ cups flour

1 ½ tsp baking powder

¼ tsp salt

zest and juice of one lemon

½ cup milk

½ cup chopped nuts

Beat together shortening and 1 cup of sugar, add egg and beat until fluffy.  Add dry ingredients alternately with milk to the sugar mixture.  Add nuts and lemon rind. 

Blend 1/3 cup sugar and lemon juice; set aside until bread is baked.

Bake the bread in a greased 8 ½ inch bread pan at 350 degrees for about 50-60 minutes.  Cool a few minutes and turn onto plate, while still warm pour the lemon-sugar mixture over the bread.

This is very delicious and a good thing to serve with coffee.
