Meatball Stroganoff

1 lb ground beef

1 onion chopped

2 cloves garlic

1 tsp salt

1 tsp pepper

2 tbsp unsalted butter

2 tbsp flour

½ cup fresh bread crumbs

2 large egg yolks

2 tbsp oil

½ lb mushrooms

½ cup sherry

2 cups chicken stock

1 cup sour cream

Combine meat and ½ of onion, garlic, salt, pepper, bread crumbs, egg yolks and ½ cup of water.  Mix well.  Heat the oil and cook meatballs until well browned.  Pour off excess fat, leave 3 tbsp and add other ½ of onion and cook.  Then add in the mushrooms and cook 7 to 10 minutes.  Add sherry and reduce.  Add chicken stock.  Rub together butter and flour to make a paste and add to liquid, whisking thoroughly.  Add meatballs and sour cream, salt and pepper and cook to heat meatballs.
