Mexican Zucchini Casserole

Makes 8 Servings

4 cups shredded zucchini

¼ cup finely chopped onion

1 small can chopped green chilies

4 eggs

¼ cup vegetable oil

1 ½ cup baking mix such as bisquick (not flour)

½ cup grated cheese

salt and pepper to taste

Preheat oven to 375 degrees.  In a large bowl mix together zucchini, onion and chili peppers (peppers are optional).  In a smaller bowl beat eggs together with oil until combined.  Add to vegetable mixture and stir until combined.  Add baking mix and cheese to vegetable mixture.  Stir well and add salt and pepper to taste.  Pour into a greased 9x13 - inch baking dish.  Top with more cheese.  Bake for 45 minutes.  Cool slightly.  Cut into squares and serve warm.
